The product is a particularly active dry pure yeast of strain Saccharomyces cerevisiae. The specially selected strain is characterized by high fermentation power, even at low temperatures. It grants the complete final fermentation as well as the development of varietal aroma and bouquet substances. The yeast is particularly suitable for the fermentation of all types of fruit, which are harvested and mashed in late autumn at low temperatures. In addition, fruit stored in the cold store can be processed directly, without prior heating. The high fermentation rate may result in excessive mash heating at mash temperatures above 20 ° C. If a higher mash temperature is foreseen, the yeast dosage should be reduced.
Applications
Suitable for complete fermentation of cold mashes of all types of fruit. Stir dry yeast in approximately ten times the amount of water at a temperature of 35 ° C and allow to stand for 10 minutes for rehydration (foaming indicates activity.) Stir the yeast mixture carefully into the mash.

For fermentation temperatures over 23 ºC, we recommend the use of our fruit brandy yeast (Art.-No.: 100.706).
